Put the apples in a large bowl. Pour water over them until they are half covered. Sprinkle baking soda evenly over the apples so that they are covered. Use both hands to scrub the apples thoroughly, especially around the stem ends. Rinse them under running water. Dry them completely with a kitchen towel and set them aside.
