Mini Leave Pavlova with Marinated fruits with Gin

I’ve always loved the balance in a classic pavlova, the contrast of crisp edges and a chewy center. But for this version, I wanted to shape the meringue into little leaves, as a nod to nature and the freshness of the berries. Pavlova has long been a celebratory dessert in Australia and New Zealand, often shared at gatherings and summer tables. Here, the berries are lightly marinated in gin and tonic, giving them a clean, floral note that lifts the whole dish. It’s light, playful, and quietly elegant.

Turn cooking mode on

Step 1

Prep time: 40 minutes plus 12 hours to marinate in refrigerator Cook time: 50 minutes Plus 15 minutes to dry the meringue Serving: 6 Place the berries, mint, and limes in a large bowl. Cover them with water and add the vinegar. Let them sit for a few minutes. Meanwhile, pick out the limes and scrub their peels with baking soda. Then, rinse the limes, pouring out the vinegar water. Place all the ingredients in a colander and rinse them under running water.
