Notes

  • Potato starch is key: Authentic German Black Forest cake contains no baking powder. The potato starch + separated-egg method is the secret to a light, moist sponge.

  • Hot water + egg yolks: A traditional German grandmother's technique. Warming the yolks helps them whip up better and incorporate more air, resulting in a lighter sponge.

  • No opening the oven door for 20–30 minutes: Opening the door while the sponge is rising lets in cold air and causes the cake to deflate. Set a timer for 20–30 minutes and don't open it!

  • Watch for meringue overwhipping: Once it turns clumpy, there's no going back. Whip only on medium speed, and once peaks start forming, check every 10 seconds.

  • Overnight chilling highly recommended: Letting the assembled cake rest in the fridge overnight lets the layers fully set and gives much cleaner slices.

  • Storage: Keeps refrigerated for 3–4 days 🍒🎂✨

  • Re-infusing the pits: If you take the pits picked out from the fruit and steep them in vodka again, you can extract a bit more of that almond-like flavor from them. This allows for a Kirschwasser-style infusion (age for an additional 2–3 months).
